Fitted or freestanding: planning a French country kitchen layout
Most working kitchens still need some fitted runs. The sink, the dishwasher and the range sit best in a continuous counter at 36 in (91 cm) height, with plumbing and gas behind. The French country approach keeps those runs short and plain, painted or in simple wood with a stone, tile or zinc top, and gives the remaining walls to freestanding furniture. In a medium kitchen, one fitted wall and one or two freestanding pieces, with a table in the middle, is a sound balance.
Freestanding pieces need clearance. Allow about 42 in (107 cm) between a counter and an island or table, 36 in (91 cm) in front of a dresser for its doors, and at least 15 in (38 cm) of counter beside the range. The French country kitchen guide shows how this balance changes with the size of the room.
The vaisselier and buffet de cuisine as country French cabinets
A vaisselier is a dresser: a low buffet with doors and drawers, topped by an open rack with plate rails. It stores and displays at once, so it suits everyday plates, bowls and pitchers. Many measure 50 to 60 in (127 to 152 cm) wide, 18 to 22 in (46 to 56 cm) deep at the base and 80 to 90 in (203 to 229 cm) tall. Check the ceiling height and the depth of the rack, which may be only 6 to 8 in (15 to 20 cm), before planning dinner plates on it.
A buffet de cuisine, often in two parts with a glazed or paneled upper case, holds what should stay out of dust: glassware, dry goods, linen. A kitchen buffet that has lived beside a stove often shows shrinkage cracks, later shelves and replaced hinges, which are acceptable when described. Our pages on buffets and sideboards and storage cabinets show the main forms. A regional style name describes an inspiration, not a documented origin.
Open shelving and a table or workbench as the island
Open shelves replace upper cabinets well when they carry what is used every day. Plan shelves 10 to 12 in (25 to 30 cm) deep on strong brackets, spaced 12 to 15 in (30 to 38 cm) apart. A plate rack over the drainboard lets plates drip dry.
A farmhouse table or an old workbench makes a convincing island, but heights differ. Dining tables stand 29 to 30 in (74 to 76 cm), lower than a counter; that suits pastry and seated work but tires a standing cook. A workbench, an établi, is often 32 to 35 in (81 to 89 cm) and can be raised on blocks or casters without cutting the old legs. Our selection of kitchen islands and workbenches lists heights for each piece.
A vintage French country kitchen that works: heat, water and food safety
Heat and water are the two risks for antique wood. Keep old furniture at least 18 in (46 cm) from the side of a range and away from the steam of a dishwasher, since repeated wetting and drying opens joints and lifts veneer. Wood moves across the grain as humidity changes, so a dresser beside an oven wall is the most likely to crack. A wooden top near the sink needs a stone or zinc surface, or regular waxing.
Food safety comes next. Old painted surfaces can contain lead: have paint tested before sanding it or letting it touch food, and never prepare food directly on an old painted or unknown finish. Use a cutting board on an old table, keep an old zinc top for serving rather than for acidic foods.
What to compare
| Form | Suggested Use | Decisive Check |
|---|---|---|
| Vaisselier with plate rack | Everyday plates and pitchers on display | Rack depth and ceiling height |
| Two-part buffet de cuisine | Glassware, dry goods, linen | Stable back; original or later shelves |
| Farmhouse table as island | Pastry, seated prep, family meals | 29 to 30 in height against a 36 in counter |
| Workbench (établi) | Standing prep, raised if needed | Firm top, no active worm, food-safe finish |

Frequently asked questions
How do you make kitchen cabinets look French country?
Keep fitted runs short and plain, painted or in simple wood with a stone, tile or zinc top, and give the other walls to freestanding pieces such as a dresser or a two-part buffet. Add open shelves for everyday dishes and a table or workbench in the middle.
Can an antique dresser be used in a working kitchen?
Yes, if it stands away from heat and water. Keep it at least 18 in (46 cm) from the side of the range, away from dishwasher steam and radiators, and wax the top regularly. Have any old paint tested for lead before food touches it.
What height should a farmhouse table island be?
A farmhouse table stands 29 to 30 in (74 to 76 cm), lower than a 36 in (91 cm) counter. That height suits pastry and seated work. For standing prep, a workbench of 32 to 35 in (81 to 89 cm), or a table raised on blocks or casters without cutting the legs, is more comfortable.
Are open shelves practical in a French country kitchen?
Open shelves are practical when they hold what is used every day, because dishes in daily rotation do not gather dust. Plan shelves 10 to 12 in (25 to 30 cm) deep on strong brackets, and keep oils, spices and glass away from the range.
